Maipi has not lost one iota of what made it great.
Two Michelin-starred chefs, Carito Lourenço and Germán Carrizo, take over the baton of an emblematic restaurant, maintaining everything that the former owners built for more than 40 years.
Germán Carrizo and Carito Lourenço, at the helm of Fierro, have had the brilliant idea of keeping Maipi and prolonging the life of an emblematic restaurant where tapas and stews will continue to be the heart of the menu.
If Carlos Herrera speaks this way about Maipi, we will have to listen to him…
“Maipi is a bar with a star. It’s not one of those solemn establishments where nothing ever seems to happen,” says Tino Carranava.
“Maipi is one of the two or three best bars in Valencia,” says Santos Ruiz. “You sit at the bar, you see that display case full of meats and seafood and you understand that you are in front of a great product restaurant.”
“My grandmother and my mother used to go to a bingo that is no longer there but was right across the street. They used to sit next to Pasieguito, who was the guy who signed Mijatovic, and Lola Flores’ sister.” Daniel Borrás
For Pilar Almenara Maipi oozes soccer. “To enter you must pull a large Valencia coat of arms carved in wood.”
Almudena Ortuño tells how this changeover and the collection of the legacy came about. “They promise to respect its essence, “because Maipi is not here to change anything”.
